Celebrate the Year of the Ox
Lunar New Year is February 12th, it is the year of the Ox. I spoke with Tammy about the New Years Traditions, and she recalled a memory of watching grandpas and grandmas chasing after the pig or the chickens that were to become part of a multi-day celebration. She said everyone is in a rush to get things done before the new year, due to all of the industries shutting down for the holiday— allowing all the workers go home to visit their families to share the most important, and most labored-over meal of the year. 

Tammy is preparing a 4-Course Dinner, $60: Lucky Golden Dumplings, Braised Beef Big Bowl Noodle, Tangerine Beef, 8 Treasure sticky rice. These dinners are pre-sale only, are limited quantity and available for pick in a small window of time, ready to be picked up at 4pm or 7pm, depending on the day and time you chose.  Order by noon on February 10th.

Lucky Golden Dumplings (4)
Shiitake mushroom, bean curd sheet, spinach, roasted leek, Chinese celery, wrapped in a butternut squash dough. 
"Chinese dumpling is one of the most important foods in Chinese New Year. Since the shape Of Chinese dumpling is similar to ancient gold or silver ingots, they symbolize wealth." To take it a step further, she incorporated the American South's tradition of eating greens (symbolizing money) on New Years, in the filling. Read More

Tammy formulated a new dough just for these dumplings, using butternut squash as a natural food coloring. She took extra care to roast the leeks, to bring out their sweetness. The ingredients for the filling were hand-cut, the old-fashioned way, in order to not tear up the delicate spinach and to highlight the specific textures of each ingredient. These were not machine made!
Braised Beef Noodle
Beef shank braised with the savory 5 spice flavors- star anise, clove, cinnamon, Szechuan peppercorn and tangerine peel. Served with steamed lotus root, napa cabbage, red pepper and thick-sliced fun noodle. Chicken-based broth served on side. 1 bowl

Tammy is revisiting the flavors of a noodle dish from twenty years ago, Beef Brisket Noodle, and reinventing it with the flavorful and unctuous Beef Shank for the Lunar New Year Dinner. This braise is slow cooked for several hours to produce fall-off-the-bone tenderness. The noodles for this are hand-cut rice noodles we call "Big Fun". My hope is to see this on the menu in the future, try it and let us know what you think.
Tangerine Beef
Thin-sliced crispy beef served over root vegetable chips: taro, sweet potato & golden beet. Fresh-squeezed tangerine glaze with kumquat & sesame seed garnish. 1 entree
Here is a spin on a familiar menu item that only shows up for the New Year menu- Tangerine beef. Similar to Beef Crispy Tiger, but made with fresh -squeezed tangerine juice and kumquat. 

Fact on tangerine peel: "The longer the peel is aged, the more it is prized for its depth of flavor and medicinal properties. This means that high-quality, long-aged dried tangerine peel can be pricey, selling for up to $5 per gram." Read More
8-Treasure Sticky Rice
This is a sweet sticky rice dessert with New Years significance. Tammy makes a variation of it every year. This year it's blueberry, jujube, currants, golden raisin, mung bean, adzuki bean, shredded coconut, fig, kumquat, sesame seed and coconut creme sauce. 
"Eight Treasure rice pudding(八寶飯) is a traditional Chinese New Year dessert, very popular in both China and Taiwan. The name comes from the eight different kinds of dried fruits, such as raisins or candied winter melon, that are considered key ingredients. In the Chinese tradition, the number eight is a magical number: when pronounced, the word sounds like another Chinese word (發) which means to be rich or to thrive in business." Read more
