Fresh & Green: This past week Tammy bought a lot of green beans and cabbage. Our ever-popular dry sautéed green beans are on sale for as long as she can find an abundance of beans at the market, she just bought a fresh batch this morning. The sale price is $8 and the discount is automatic.

Need your State Fair fried food fix? Tammy has been making Chicken Dumpling Salad- a kind of riff on Japanese karaage and cabbage, but it's in a chicken meatball in a crunchy wonton instead of batter-fried chicken nugget. The early planted cabbages are coming to season and she has been slicing an elegant julienne of cabbage slaw. Comes with sweet & zesty nuoc cham.

We had to raise the price on most noodle dishes, the Asian-made ingredients are not coming to America as reliably as they used to, their price went up on our supply side. As you might know, the cost of everything has increased in the past year. We've been experiencing this in our restaurant food supply and have been holding off passing the cost onto you. While we opt to buy local produce as much as we can, (to avoid long-distance shipping costs, and to support local growers), the cost of some of our locally-sourced produce has also increased to keep up with demand from the global shortage. Since we make our own menu items in-house and don't rely on pre-packaged egg rolls, dumplings and wontons (etc.) delivered to our door, we have been able to keep them available to you with out the mark-up, but that is not sustainable for us. 

World-wide, there are shipping and production delays, an all-around depletion of resources. Closer to home, there is a shortage of farm workers, meat processors, and health. We cannot deny that the food supply is greatly affected by the pandemic. Let's not forget that there is a drought, wildfires and even floods, in every direction. We will slowly make changes to the menu that reflect market costs. 

We were able to get a case of mock duck, (last week it was in short supply). Tammy is considering making it from scratch. The now-defunct Evergreen Restaurant on Eat Street was one of the few places that made their own mock duck and mock meat dishes, so we hope to get some free time to experiment and refine what could be an amazing meat substitute.
