Items are available on-site at the markets.  This week we've brought back one of the original drinks of from the early years, and the first menu Tri-Color, or Chè ba màu. It's a traditional sweet sweet treat of red bean, yellow mung bean, agar agar and coconut cream. In the Philippines, the more fanciful version is called Halo-Halo. This is the O.G. protein drink— plus it has minerals from the sea vegetable in it- in the form of the agar gelatin. Tammy is a cocktail queen!

Do you ever go to a bar or coffee shop and watch them craft your drink with great care and artistry? Tammy crafts her drinks in the kitchen and in her garden. The strawberry rhubarb lemonade, the ginger ales, and Tri-color drinks start on the stove, with ingredients she picked, squeezed, seasoned and sliced. At the market you'll see her ladle a scoop form one vessel and maybe add a dash form another. She'll add fresh fruits and herbs bought from the farmer's market that day, to garnish your drink. She has no drink shaker, and no fancy bartender moves, but she's making you a cocktail.

Like most of Rainbow menu items, they are made from scratch, by Tammy— and aren't coming from a box, a bag or a plastic bin. (The only exceptions are the Vietnamese coffee, chai tea and iced tea.) You're not seeing 90% of the work going into the production. She slowly cooks the sweet syrups on the stove, and cools them for for the market.
