Slaw Season 2.0: Oktoberfest!

At the Farmer's Market
September is here, and that means Oktoberfest is here. (The real Oktoberfest has been cancelled due to the pandemic.) Tammy's got a batch of tangy Asian slaw, perfect for your bratwurst. It's a juicy & tangy slaw with hints of spiced citrus zest and plenty of crunch. Add to your entrées, green salad, or enjoy on its own. And yes, it's always orange, so you can bring these gorgeous fall colors to your table year-round.

If you didn't already know, Tammy supplies this slaw to the fine folks grilling up meats at the Tollefson Family food stand at the Minneapolis Farmer's Market. She'll have 10 of these for sale at her stand, this weekend.

The changes in the weather means comfort food, what better way to tuck in than by having a traditional Chinese rice cake? Imagine a potato cake, but made of rice —crispy on the outside, and soft on the inside. Choose from Turnip, Taro or plain Rice. Topped with pan-fried egg & scallions and served with tangy, sweet soy dipping sauce.

This often-overlooked dish is one of the most popular menu items from the original Rainbow, which was just across the street. Long-time customers know this is one of few places that serves them this style, and makes them from scratch in big batches. If you Google Chinese rice cakes, you'll see a wide variety images and styles, but ours stands out as extra toasted, and extra large. Some look like little coins, and are really glutinous and chewy. Some are dessert cakes, and on the sweeter side. Rainbow Rice cakes are like hashbrowns or a potato cake, but made with rice.

RAINBOW REWARDS
As you might know, the cost of everything has increased in the past year. We've been experiencing this in our restaurant food supply and have been holding off passing the cost onto you. While we opt to buy local produce as much as we can, (to avoid long-distance shipping costs, and to support local growers), the cost of some of our locally-sourced produce has also increased to keep up with demand from the global shortage. Since we make our own menu items in-house and don't rely on pre-packaged egg rolls, dumplings and wontons (etc.) delivered to our door, we have been able to keep them available to you with out the mark-up, but that is not sustainable for us.

World-wide, there are shipping and production delays, an all-around depletion of resources. Closer to home, there is a shortage of farm workers, meat processors, and health. We cannot deny that the food supply is greatly affected by the pandemic. Let's not forget that there is a drought, wildfires and even floods, in every direction. We will slowly make changes to the menu that reflect market costs.
