Back to Noodle School: Mei fun, DIY your own pun. Pan fried noodles: If you like a hint of smokey wok-hei, these fire-singed noodles are a good place to start. Watch the video for quick visual of wok-hei.  Week 1, we learned about chow fun noodles, week 2, we learned about mein. It's week 3 of Back to Noodle School and today it's all about mai fun. These are thin, rice noodles, similar in size to an angel hair pasta, but without the density and gluten of a wheat noodle, or animal protein in an egg noodle. So they are gluten-free and vegan.  We use them in our most popular dishes; Jai Mai Fun, Singapore Chow Mai Fun, and they are the backbone of our egg rolls. Mai fun keeps everything light and balanced, and is an excellent conduit for flavor. These noodles are what soak up the nuoc cham sauce in your egg rolls, and provide surface area for a fragrant dusting of curry in the Singapore Chow Mai Fun. ⭐ JAI MAI FUN 🥘 🔰 $14.00 Choose Mai Fun for a Big Bowl Noodle Soup, where you have the option to pick your own noodles as the base for a curated bowl of flavors. Just select it from the drop-down menu.  Since these noodles are delicate, they are not an option as an add-on to all dishes that Chow Fun and Mein may be better suited for, but you can find them together with their best menu companions. ORDER NOW CHICKEN & KALE BIG BOWL NOODLE 🍜 $11.00 Big Bowl Noodle Soups come in two parts: A container of dry ingredients and a container of broth. It's up to you whether or not you want to heap the two containers into one big bowl as we have pictured above. Though if you chose Mai Fun, you may not want to do that, as these get overcooked too easily in the hot broth. What you can do is take a little bite of the dry ingredients and have a sip of broth. It keeps the noodles perfectly al-dente.  Covid Update We are still a take-out only operation, and we don't know if and when we will open up to dine-in. The dining room has been used as dry storage for the past year and the seating area by the front windows is still the plant nursery. We still feel strongly that the delivery operations remain on hold, and not be channeled out to the many delivery options that other restaurants use. As a woman-owned family business, that promotes quality over quantity, we'd prefer to have control of how our food reaches you, and these services may or may not come up to our standards.  Chef Tammy would often be the delivery driver so she could personally connect with you, as she did in the dining room. She is currently nursing an ankle injury and needs to take it easy, though that won't stop her fast hands- she is still making all the appetizers that you know and love. Additionally, we don't want to be a slave to technology, as each delivery service requires its own iPad. Five extra screens is what we counted at other businesses; we don't need more screens in the kitchen or the dining room. We hope you understand, and please don't solicit us with these requests to join your favorite delivery service.
