Another year has passed and even though we've been in business for 30+ years, every year we realize we have more to learn.

Last year we learned a lot about over-extending ourselves on our busiest day. This year, with careful planning, we were able to have a smooth-sailing Christmas Eve and everyone went home happy. Thank you to those that stuck with us and gave us a second chance at making your holiday meal.

We have learned to focus more on self-care. This means not saying "yes" to all social functions, side projects, TV appearances, or even making late last-minute orders. It's not sustainable for us to be "On or Open" for everyone and not make time for ourselves, including our family. Some of us are at the age where the focus has moved from taking care of our children to taking care of our parents, some of use are doing both— all while trying to run small business. Thank you for seeing us through.

GINGER-HIBISCUS LEMONADE 🌺 PACKED PUNCH
GINGER-HIBISCUS LEMONADE 🌺 PACKED PUNCH$8.00
Do you ever go to a bar or coffee shop and watch them craft your drink with great care and artistry? Like most of Rainbow menu items, they are made from scratch, by Tammy— and aren't coming from a box, a bag or a plastic bin.

Tammy crafts her cocktails in the kitchen and in her garden. You're not seeing 90% of the work going into the production. Drinks start on the stove, with ingredients she picked, squeezed, seasoned and sliced. She slowly cooks the sweet syrups on the stove, and cools them for vacuum-sealing into our enjoy-at-home Packed Punch. (Discounted on the weekends when you use the coupon code BRUNCHPUNCH).

Packed Punch: If you've visited us at the Minneapolis Farmer's Market, you'll be familiar with our lemonade and ginger-ale served with fresh fruit, herbs and boba. We have them available year-round. Use them to liven up a table: add some punch to seltzer, cider, or champagne.

How to Serve: These come frozen, and will need to be thawed. Our Packed Punch has real rhubarb, mint, and mango chunks- you may want to filter these out. A pitcher with a filter works well, as do strainers, or cocktail shakers. A French press, typically used for making coffee, is just the right size for one of our Packed Punch pouches. Pour over ice and garnish with mint, lime or lemon twist, blood orange or cucumber slices, Maraschino or Amarena cherry.

Revisiting service-industry stabilty
Chef José Andrés Wears 'Immigrants Feed America' Shirt.
You may have seen this posted here, and at other restaurants: In order to support fair wages for all staff and offset the costs related to the pandemic, Rainbow is charging a 20% service charge on all orders. "Pursuant to Minnesota Statute Section 177.23, subdivision 9, this charge is not a gratuity for employee service."

Early in the year, we helped create a more stable work environment for the staff by implementing a service charge, guaranteeing fair wages, and not based on the whims of tipping (or not tipping). With the prevalence of the pandemic, and the rise of unemployment, we wanted to make sure, that if for some reason, if any of the staff needed to sign up for unemployment, that they would be able to sign up for a livable wage instead of the $2-$4 minimum wage (for tipped employees) so common in the restaurant industry. The idea of tipping equitably for immigrant-made food is not in everyone's field of vision, and that directly affected the predictability of the take-home pay for our staff. We're re-posting links to the details of this practice, from the email that first went out when we started this program.

Did you know that in 43 states, the tipped minimum wage is lower than the minimum wage—and can be as low as $2.13 per hour?
We encourage you to discover the origins of tipping and how it affects our societal well-being as whole.
This PBS report will explain: Rethinking wages for tipped workers.
